Poutine Part 2

Honestly the gravy kind of tastes like chicken soup. I’m not sure I did this right. Due to the lack of fresh chicken stock I went with Chicken powdered stock, vegetable stock, white pepper, roux, and I read somewhere poutine sauce has some ketchup in it. The ketchup helped quite a bit before I added it tasted way too salty. I’m guessing its from the two stock types I used. I should have reduced it a bit more before I added the roux.

Order of the layer:

Bottom Top

Mozzarella > chips > gravy > Chips > mozzarella > gravy > Chicken

  1. bradjunswick said: some people put ketchup on their poutine, but i’ve never seen it in the gravy itself. the only things i make my gravy with are chicken stock powder, the leavings in the pan after cooking the meat, and corn starch.
